Cream powder is a manufactured dairy product made by concentrating the milk fat and afterwards removing moisture until only the dry matter is left. Usually the production process includes centrifuging, evaporating and spray-drying. The milk fat content of cream powders varies between approximately 40 and 80%. The products are mainly used in bakery, sauces and ice cream applications.
