“Geraniol, like rose petals”
Certified wine flavour standard used to train professional tasters to recognize and scale the intensity of geraniol character. Geraniol imparts a positive rose-like varietal flavour note to certain white wines. It is present in grapes in a bound form and released by enzyme during fermentation. The amount formed depends on the variety of grapes used, their growing conditions, how there were extracted to form the must, the yeast strain, and the conditions employed during fermentation.

Assessment
The best way to detect geraniol character in wine is as follows. Without covering the glass, swirl the sample to release the aroma. Take a single short sniff. Repeat as necessary.

The flavour threshold of geraniol in wine is 50 - 750 µg / l.

Origins
Geraniol is present in grapes in a bound form. It is released by enzymes during fermentation. The amount formed of geraniol formed depends on the grape variety, growing and extraction conditions, yeast strain and fermentation parameters.

Importance
Geraniol contributes a positive rose-like varietal character to certain white wines, being one of three terpene compounds which imparts Muscat-like notes to wine. White wines which contain significant quantities of geraniol include Gewürztraminer, Pinot Gris and Riesling.
