Geraniol imparts a positive rose-like varietal flavour note to certain white wines. It is present in grapes in a bound form and released by enzyme during fermentation. Importance
Geraniol contributes a positive rose-like varietal character to certain white wines, being one of three terpene compounds which imparts Muscat-like notes to wine. White wines which contain significant quantities of geraniol include Gewürztraminer, Pinot Gris and Riesling.
